Wake Me Up Sweet Berry Muffins

INGREDIENTS:

2 larg eggs, at room temperature
1 cup granulated sugar
1 cup Greek yogurt
1 sachet Go! Gano Revive
1/2 cup canola oil
1 tsp vanilla extract
1/4 tsp salt
2 cups all-purpose flour
2 tsp baking powder
1/2 cup fresh strawberries, hulled and diced
1/2 cup fresh raspberries
1/2 cup fresh blueberries

 

DIRECTIONS:

1. Preheat your oven to 400F. Line a 12-count muffin tin with cupcake liners.
2. In a large mixing bowl. use a hand mixer to beat together eggs and sugar on high speed for about 5 minutes, until thick and well combined.
3. Place the Greek yogurt into a medium bowl. Open the sachet of Go! Gano Revive and pour over yogurt, then stir to combine. Transfer the yogurt mixture into the bowl with the egg mixture. Add canola oil, vanilla extract, and salt. mix together on low speed until just combined.
4. In a small bow, add flour, baking powder, and salt. Whisk together using a hand-held whisk. transfer about 1/3 of the flour mixture to your batter and gently whisk together. Repeat with half of the remaining flour, whisking afterward. Repeat again with the remaining flour and gently stir to incorporate it all. Do not overmix.
5. Using a spatula, fold in all your strawberries, raspberries, and blueberries. Fold the batter over the berries and stir gently to combine.
6. Divide the batter evenly into the prepared muffin tin. Bake in the center of the over for 20-22 minutes. When done, the top will be golden in color and a toothpick inserted into the center will come out clean (no batter clinging to it). Transfer muffins to a wire rack to cool.
