MOCHA PROTEIN BARS

INGREDIENTS:
| 2 | cups cashew nuts |
| 1 | cup protein powder |
| 1/4 | cup cocoa powder |
| 1 | sachet GanoCafe Mocha |
| 18 | large Medjool dates, pitted (10 ozs) |
| 3-5 | Tbsp water, as needed to blend |
INSTRUCTIONS:
| 1. | Line an 8" x 8" pan with parchment paper; set aside |
| 2. | In the bowl of your food processor, add nuts, protein powder, cocoa powder and GanoCafe Mocha powder. Blend just until nuts have broken down into small pieces |
| 3. | Add in pitted dates and process until combined. With the motor running, add about 1 tablespoon of water at a time until mixture is sticky and everything comes together. |
| 4. | Transfer mixture to lined 8x8 pan. Press evenly into pan. |
| 5. | Place pan in the fridge for 1 hour, or freezer for 30 minutes. Then, remove from the pan and cut into 12 or 16 squares. |
| 6. | Store bars in an airtight container in the fridge for about 2-3 weeks, or wrapped tightly in freezer for longer. |
NUTRITIONAL FACT:
The fiber in dates slows digestion and may help prevent blood sugar levels from spiking too high after eating. For this reason, dates have a low glycemic index, which measures how quickly your blood sugar rises after eating a certain food. That makes it perfect for a snack on on the go!
