MOCHA PROTEIN BARS

INGREDIENTS:

 2 cups cashew nuts
1 cup protein powder
1/4 cup cocoa powder
1 sachet GanoCafe Mocha
18 large Medjool dates, pitted (10 ozs)
3-5 Tbsp water, as needed to blend

 

INSTRUCTIONS:

 1. Line an 8" x 8" pan with parchment paper; set aside
2. In the bowl of your food processor, add nuts, protein powder, cocoa powder and GanoCafe Mocha powder. Blend just until nuts have broken down into small pieces
3. Add in pitted dates and process until combined. With the motor running, add about 1 tablespoon of water at a time until mixture is sticky and everything comes together.
4. Transfer mixture to lined 8x8 pan. Press evenly into pan.
5. Place pan in the fridge for 1 hour, or freezer for 30 minutes. Then, remove from the pan and cut into 12 or 16 squares.
6. Store bars in an airtight container in the fridge for about 2-3 weeks, or wrapped tightly in freezer for longer.

 

NUTRITIONAL FACT:

The fiber in dates slows digestion and may help prevent blood sugar levels from spiking too high after eating. For this reason, dates have a low glycemic index, which measures how quickly your blood sugar rises after eating a certain food. That makes it perfect for a snack on on the go!
