Coffee-Marinated Chicken

A great marinade can add amazing flavor to chicken. Take for instance this Caribbean-inspired marinade infused with Ganoderma-enriched GanoCafe Classic. Enjoy this tangy marinated chicken with flavors of orange, lime and Latin spices. It's perfect for tacos, especially when topped with a fresh pineapple or mango salsa!

INGREDIENTS:

1 cup hot water
1 sachet GanoCafe Classic
8 boneless, skinless chicken thighs
2 Tbsp brown sugar
2 tsp oregano
1 tsp cumin
5 cloves garlic, smashed
2 bay leaves
1/2 medium onion, halved
1/2 cup orange juice
Juice of 1 lime
2 Tbsp olive oil
Salt and Pepper, to taste

 

DIRECTIONS:

1. Prepare the GanoCafe Classic by pouring sachet contents into a mug along with 8 oz of hot water and stir until combined Set aside to cool.
2. In a re-sealable container or bag, add chicken and the next eight ingredients (brow sugar through lime juice). Pour GanoCafe Classic into the bag and seal. Marinate 4-6 hours in a refrigerator.
3. When ready to cook, heat olive oil in a deep skillet or Dutch oven over medium-high heat.
4. Remove chicken from marinade (reserve liquid) and blot with paper towels. Place chicken in the olive oil and season with salt and pepper. Cook for 3 minutes on each side or until browned.
5. Add marinade contents to the pot and bring to a boil over medium-high heat. Continue to boil, uncovered, for 20 minutes.
6. Remove chicken with a slotted spoon and transfer to a plate. Let cool, then shred.
