Blueberry Bread Loaf

INGREDIENTS:

1  1/2 cups warm water (around 90 deg F)
1 Tbsp instant or dry active yeast
1/2 tsp salt
1 tsp lemon zest
1/4 cup white sugar
1 cup fresh blueberries
1 sachet Go! Gano RESTORE
3.5-4 cups all-purpose flour

 

DIRECTIONS:

1. Grease a 9x5 inch loaf pan and set aside.
2. In a large bowl combine the warm water, yeast, blueberries, Go! Gano RESTORE, sugar, salt and lemon zest. Let stand 5 minutes until frothy. You can also use a stand mixer.
3. Add 2 1/2 cups of the flour and mix to combine. Then, mix in additional flour 1/4 at a time. You want just enough to make the dough come together into a smooth and moist dough (but not too sticky). If using stand mixer, attach the kneading hook for this step. Stop kneading when the berries seem to be crushing.
4. Remove the dough from the bowl and transfer to a floured surface. Gently kneed in a bit of flour until you have a smooth ball. Place in a greased bowl, cover and let rise until doubled in size (about 1 hour).
5. Remove dough to a floured surface and press out into a 9x18 inch-ish rectangle. Starting with the 9-inch edge, roll the dough up like a scroll. Place into prepared 9x5 loaf pan. Cover with greased plastic wrap and let rise again until doubled in size (about 45 minutes).
6. Meanwhile, preheat your oven to 350F Once the dough is finished rising the second time, pop it in the oven and bake for 30-35 minutes, or until deep golden and cooked through.
