Sweet Blueberry & Greens Mousse

Pull together this heavenly dessert that is an antioxidant gold mine. Fresh blueberries combine with Go! Gano RESTORE's mix of spirulina, goji berry, and Ganoderma lucidum to provide hundreds of antioxidants in every bite. INGREDIENTS:

1 cup blueberries, plus extra for garnish
1/2 cup sugar
1/2 tsp salt
1 cup sour cream
8 oz cream cheese, at room temperature
1 sachet Go! Gano RESTORE
1 cup heavy cream, chilled
2 Tbsp powdered sugar

 

DIRECTIONS:

1. In a small saucepan, combine the blueberries, sugar and salt. Bring to a simmer over medium heat, mashing the blueberries as you go. Once simmering, cook for about 8 minutes while continuing to mash and stir the mixture, until thickened to a jam consistency. Remove from heat.
2. Scrape the blueberry jam into a food processor and let cool completely.
3. Cut cream cheese into cubes and add them to the food processor. The cream cheese should be softened at room temperature to ensure a smooth texture. Add the sour cream and Go! Gano RESTORE to the food processor and puree until smooth.
4. In a large bowl, beat the heavy cream until soft peaks form. You can whisk vigorously for about 8 minutes, or use an electric hand mixer for about 1 minute. Add the powdered sugar and whisk until combined.
5. Gently fold the berry cream mixture into the whipped cream until combined completely.
6. Spoon the mousse into six glasses or ice cream dishes and top with additional blueberries. Keep cool until enjoyed.
